Apple Walnut Salad

Delicious apple walnut salad that comes together super quickly. It’s tossed in our delicious Yarrawonga Splash vinaigrette and you can serve it with just about any of your favourite weeknight dinners!

Ingredients

  • 120g Rocket 
  • 60-80g Spinach Leaves
  • 2 Red Apples, quartered and thinly sliced
  • ½ Red Onion, thinly sliced
  • 1 Small radicchio, thinly sliced
  • ½ Cup Dried cranberries
  • ½ Cup Walnuts, chopped roughly
  • 100g Goat's cheese (or any soft cheese you prefer)
  • Rich Glen Yarrawonga Splash Vinaigrette

Directions

  1. Place the dried cranberries into a small bowl and cover them with boiling water. Allow them to soften for about 15-20 minutes, then drain and set them aside until you are ready to add them to the salad.

  2. To make the salad, take a large salad bowl or platter and combine the rocket and spinach leaves. Then, add the radicchio, red onion, three-quarters of the cranberries, and apple. Toss them together to combine.

  3. Crumble the goat's cheese into large pieces over the salad, and then add the remaining quarter of the cranberries.

  4. Drizzle the salad with a generous amount of Rich Glen Yarrawonga Splash Vinaigrette and serve immediately.
